Easy Spanish rice and black beans

Been making this recipe for a little while. I think I finally got it right. It’s a good little meal if you want to take a break from eating meat or a wonderful side dish.

  • 1 1/2 cups of your favorite rice
  • 1 can of black beans, drained (feel free to sub or omit the beans)
  • 1 1/2 cups of your favorite salsa
  • 2 tbs butter
  • 2 cups water*
  • 1/2 tsp garlic powder
  • dash of cumin (optional)
  • salt and pepper to taste

Grab a nice medium sized pot with a lid that will seal nicely for rice cooking. Using medium to low heat, add your rice, spices and butter. Let it toast for a few minutes. Once you start to smell the spices and the rice toasting, add the rest of your ingredients. Follow the instructions on your rice package. This dish can also be made in most rice cookers.

Once the rice is cooked to your liking, feel free to garnish with your favorite cheese and/or sour cream. Enjoy!

*May substitute water for chicken broth
